In Munich, he spent a pivotal year working alongside Eckart Witzigmann, who became his mentor and taught him to combine a love for nature with culinary excellence.

Following this, Norbert moved to New York, where he worked with David Bouley, learning the art of innovation and starting to shape his own culinary style. Despite his international success, Norbert eventually felt a longing for his homeland—the mountains and flavors of his youth—and decided it was time to return.

In 1994, he began his journey with Hotel Rosa Alpina in San Cassiano in Badia, where he transformed a former pizzeria into a fine dining destination inspired by the traditions of Italian-Austrian cuisine. This marked the beginning of the St. Hubertus Restaurant, which earned its first Michelin star in 2000 and a second in 2007.

Over the years, Norbert embraced the principles of an ethical, sustainable cuisine grounded in human relationships – with producers, the land, and the guests. Norbert dedicated himself to socially impactful projects, becoming a leading advocate for a more ethical food culture. Since July 2023, Norbert Niederkofler has been at the helm of Atelier Moessmer Norbert Niederkofler in Bruneck, the first in the world to win several major awards less than a year after opening. Here, ‘Cook the Mountain’ found the perfect dimension to spread its sustainable principles. In November 2023, Atelier Moessmer was awarded three Michelin Stars and the Green star only 4 months after the opening, setting a world record in Michelin Guide history.
